Sommelier, Christopher Battles has continued to evolve the already exceptional list, offering between 220 and 240 different wines and maintaining an average inventory of 1,900 bottles. The by-the-glass program includes several multi-tiered selections in many of the white and red varietal categories offered. Executive Chef, Neil Smith, creates many of his menu items and nightly specials specifically to pair with the restaurant’s by-the-glass list.

As someone who has been married for 40 years, Windows on the Water owner Stan Trapp knows romance when he sees it. "I would be looking for something that was secluded. I'd want a place that had good food and wine." With that vision in mind, Trapp is able to conjure a romantic setting to make the evening unforgettable.

"When you're going out for a romantic evening, you want something special. We work really hard to try to make the restaurant special." That's why so many people choose Windows on the Water for their special occasions. Many a night, couples come to the restaurant to celebrate an anniversary, Trapp said. "Some people have their anniversary every year in the restaurant and will even request the same table they had the year before."

"It's a relaxing atmosphere, and the view certainly lends romance to the evening. Our lights are subdued and we try to foster a romantic setting," Windows on the Water owner Stan Trapp said. The 15 windows facing the water offer a 180-degree view from the stacks all the way around to Montana de Oro.

"The panorama, the fact that you can see everything makes it spectacular," he said. With such a prime waterfront view, the restaurant was designed to take advantage of the scenery.

At Windows on the Water, waiting tables is not just a temporary job, it's a career, restaurant owner Stan Trapp said. "We work very hard at giving the best service. We have experienced, professional servers who know how to do their job."

A good server should always be nearby, but never intrusive, Trapp said. "The expression I always use is you have to be friendly but not familiar. They know when to leave people alone."

The restaurant has also been rated to have "impeccable service" by the Zagat. But no matter how many awards they win, the honor is always appreciated.
